Gluten Free Spinach Pizza Base Recipe

This does sound a bit weird and... green. 
 

 However, spinach can make a really tasty, filling and firm pizza base. It doesn't taste too 'spinachy' and is super healthy and full of iron.




Recipe:
(Makes 1 pizza)

200g spinach
50g grated mozzarella
50g gram (chickpea) flour
Salt & pepper
1 small egg

Whizz the spinach in a food processor until it almost makes a paste. Add the mozzarella and then pulse a few times until mixed.

Add the seasoning, gram flour and egg then whizz again until it is completely combined.

Line a baking tray with baking paper and preheat the oven to 190c. Pour the mixture onto the baking tray and spread out to make the base.

Bake in the oven for 18 - 20 minutes until firm. Leave to cool and then flip over and peel off the paper. Make sure you do allow it to cool because this gives it time to firm up and will make peeling the paper off a lot easier.

Add your toppings, drizzle with extra virgin olive oil and put back in the oven for about 5 minutes.
